Indian Phirni

Serve 6

Three & 1/2 cups milk
1/4 cup basmati rice- soak for 3 hours
1/4 cup sugar- more if you want
4 almonds shredded
5-6 green pistachio- shredded (optional)
2-3 green cardamom powdered
1 drop kewra essence or 1 tsp ruh kewra

Method
First of all drain rice and grind with 4-5 tbsp of water to a very smooth
paste then mix rice paste with 1/2 cup milk and make it thinner. Mix the rice
paste with all the milk in a clean and thick bottomed pan. Cook on
medium heat, stirring continuously and let it boil for 2-3 minutes to get
a creamy mixture. After that add sugar and cardamom powder and mix
for a few seconds and then remove from fire. Add ruh kewra or
essence. Pour the mixture into 6 small bowls. Chill. Decorate whatever
you like.
