Chocolate with roasted Almonds

Ingredients:

125 ml milk
125 ml cream
30 g sugar
60 g egg yolk
100 g milk chocolate
100 g praline paste ( hazelnut paste can be used as an alternative)
6 g gelatin (dissolved in warm water)
200g roasted and crused almonds
225 g whipped cream

METHOD:

1. Boil milk with cream and sugar.
2. Add it to the egg yolks while continuously whisking.
3. Add the melted chocolate and then the praline paste.
4 Add gelatin dissolved in warm water. Fold in the roasted chopped almonds along with whipped cream.
5. Pour the mix in moulds that are called cut pipes because of their shape. The height should be 5 cm and diameter 3 cm. Secure one end with cling film. Keep in freezer to set..
